Issue #13 – recipe: Rachael Ray’s Mini Muffin

These little guys would be a great appetizer for a small group of family and friends or even a super bowl party.

Ingredients and Equipment:corn dog ingredients

2 (ounces) cream cheese

1 box Jiffy Cornbread Mix

1/3 cup milk

2 hot dogs; diced

1 jalapeno pepper; sliced

1 Egg

Nonstick cooking spraycorn dog finished

Muffin pan

Knife

Spoon

Mixing bowl

Measuring cup

 

Always wash your hands before handling any food.hand washing

 

Step 1:

Heat oven to 375 degrees.

Step 2:

Put cream cheese into freezer for about 5 minutes to chill. Cut cream cheese into cubes and set aside.

Step 3:

Dice hot dogs.

Step 4:

Slice jalapeño.

Step 5:

In mixing bowl, combine cornbread mix, egg, and milk.

Step 6:

Fold in hot dogs, jalapeno and chilled cubed cream cheese.

Step 7:

Spray muffin pan with nonstick cooking spray and divide the mixture equally in muffin cups and bake for 15-20 minutes. Let muffins cool for a few minutes before removing from pan.

Step 8:

Plate and serve.
